I start Faction with my old Char, and i want know if is possible change my second profession in Cantha.

Yup, after your character becomes "Closer to the Stars" as part of the story, you'll find yourself at an outpost where an NPC will allow you to change your proffession for a one time fee of 500g.

You might remember having called it "Ascended" by Tyrian terms.
